This Irresistible Summer Peach Cake combines juicy peaches and rich butter cake, topped with a peach preserves drizzle for the perfect summer dessert.

Ingredients

  • 2 cups all-purpose flour

  • 1 1/2 cups granulated sugar

  • 1 cup unsalted butter, softened

  • 4 large eggs

  • 1/2 cup milk

  • 2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 1 teaspoon vanilla extract

  • 2 cups fresh peaches, chopped

  • 1/2 cup peach preserves

Directions

  • Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
  • Cream Butter and Sugar: In a large bowl, cream together the butter and sugar until light and fluffy.
  • Add Eggs and Vanilla: Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  • Mix Dry Ingredients: In another bowl, whisk together the flour, baking powder, and salt.
  • Combine Ingredients: Gradually add the flour mixture to the creamed mixture alternately with the milk, beginning and ending with the flour mixture. Fold in the chopped peaches.
  • Bake: Pour the batter into the prepared loaf pan. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
