  • 1 1/2 cups all-purpose flour (use gluten-free all-purpose flour if necessary)

  • 1 cup granulated sweetener of choice (e.g., monk fruit sweetener, allulose, or another calorie-free sweetener)

  • 1/4 cup cocoa powder (sifted, use dark cocoa powder for a deeper flavor)

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 tablespoon apple cider vinegar (or white vinegar, or lemon juice)

  • 1 teaspoon vanilla extract

  • 6 tablespoons unsweetened applesauce

  • 1 cup water (room temperature)

Directions

  • Preheat the oven to 180C/350F. Line an 8-inch springform pan with parchment paper and set aside.
  • In a large mixing bowl, combine your flour, granulated sweetener,cocoa powder, baking soda, and salt, and mix well.
