Made with pre-made pie crusts, rotisserie chicken, frozen mixed veggies, and a combination of cream of mushroom and cream of chicken soups, this pot pie is a breeze to assemble. After mixing the filling, it’s layered between two crusts and baked until golden. A quick broil at the end gives it a perfectly crispy finish. This Easy Peasy Chicken Pot Pie is a quick, comforting dish that’s perfect for a cozy weeknight dinner.

Ingredients

  • 2 pre-made pie crusts

  • 1 can of cream of mushrooms soup

  • 1 can of cream of chicken soup

  • A splash of milk (about 1/4 cup)

  • 2 cups of rotisserie chicken, shredded

  • Half a small bag of frozen mixed vegetables

  • Salt and pepper to taste

  • 1/2 teaspoon dried thyme

  • Butter spray

Directions

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, combine the cream of mushrooms soup, cream of chicken soup, a splash of milk, shredded rotisserie chicken, frozen mixed vegetables, salt, pepper, and dried thyme. Mix everything together until well combined.
  • Take one of the pre-made pie crusts and lay it out in a pie pan, pressing it down gently to line the bottom and sides of the pan.
  • Pour the chicken and vegetable mixture into the pie crust in the pan, spreading it evenly.
  • Place the second pre-made pie crust on top of the mixture. Trim any excess crust hanging over the edge of the pan and crimp the edges of the two crusts together to seal the pie.
  • Make a few small slits in the top crust to allow steam to escape during baking.
  • Bake the chicken pot pie in the preheated oven for about 40 minutes or until the crust is golden brown and the filling is bubbling.
  • Remove the pot pie from the oven and lightly spray the top crust with butter spray.
  • Turn on the broiler and place the pot pie under the broiler for about 2 minutes or until the top is nicely browned. Be sure to watch it closely to prevent burning.
  • Once it’s nicely browned, remove the pot pie from the oven and let it cool for a few minutes before slicing and serving.
