Creamy Chicken Lasagna with White Sauce

 

A delightful twist on a classic, this Creamy Chicken Lasagna with White Sauce combines tender chicken, creamy ricotta, and fresh spinach layered between lasagna noodles and topped with a luscious white sauce.

Ingredients:

  • Lasagna:
    • 9 lasagna noodles
    • 2 cups cooked, shredded chicken breast
    • 2 cups ricotta cheese
    • 2 cups shredded mozzarella cheese
    • 1 cup grated Parmesan cheese
    • 1 cup fresh spinach, chopped
  • Sauce:
    • 3 cloves garlic, minced
    • 1 small onion, finely chopped
    • 2 tablespoons olive oil
    • 4 cups milk
    • 4 tablespoons butter
    • 1/4 cup all-purpose flour
    • 1/2 teaspoon ground nutmeg
    • Salt and pepper to taste

Instructions:

  1. Prepare the Noodles: Cook noodles as per package instructions. Drain and set aside.
  2. Make the White Sauce: In a saucepan, melt butter. Add garlic and onion, sauté until translucent. Stir in flour, cook for 1 minute. Gradually whisk in milk until thick and smooth. Season with nutmeg, salt, and pepper. Simmer on low for 5 minutes.
  3. Prepare the Chicken Mixture: Combine shredded chicken, ricotta, half of the mozzarella, half of the Parmesan, and spinach in a bowl.
  4. Assemble the Lasagna: Preheat oven to 375°F (190°C). In a 9×13 inch dish, spread a layer of sauce, add noodles, chicken mixture, and repeat. Top with sauce and remaining cheeses.
  5. Bake: Cover with foil, bake for 25 minutes. Remove foil, bake another 15 minutes until cheese is golden and bubbly.
  6. Serve: Rest for 10 minutes. Slice and serve garnished with basil or parsley.
