Banana Pudding Tiramisu

Ingredients

  • 1 cup strong brewed coffee, cooled

  • 2 tablespoons rum or coffee liqueur (optional)

  • 1 package ladyfinger cookies

  • 4 large bananas, sliced

  • 1/2 cup sugar

  • 4 large egg yolks

  • 1/4 cup all-purpose flour

  • 2 cups milk

  • 1 teaspoon vanilla extract

  • 8 oz (225g) mascarpone cheese

  • 1 cup heavy whipping cream

  • Cocoa powder, for dusting

Directions

  • Make the banana pudding: In a saucepan, whisk together the sugar, egg yolks, and flour. Gradually add the milk while whisking constantly. Cook over medium heat, stirring frequently, until the mixture thickens and comes to a gentle boil. Remove from heat and stir in the vanilla extract. Let the pudding cool completely.
  • Prepare the coffee mixture: In a shallow dish, combine the cooled coffee with rum or coffee liqueur, if using. Set aside.
  • Assemble the tiramisu: Dip each ladyfinger into the coffee mixture, quickly soaking both sides. Arrange a layer of soaked ladyfingers at the bottom of a 9x9-inch dish.
  • Layer with pudding and bananas: Spread half of the cooled banana pudding over the ladyfingers. Arrange a layer of sliced bananas on top of the pudding.
  • Add the mascarpone layer: In a large bowl, beat the mascarpone cheese until smooth. In a separate bowl, whip the heavy cream until stiff peaks form, then fold it into the mascarpone. Spread half of the mascarpone mixture over the bananas.
  • Repeat layers: Add another layer of soaked ladyfingers, followed by the remaining banana pudding, bananas, and mascarpone mixture.
  • Chill & serve: Cover the tiramisu and refrigerate for at least 4 hours, or overnight for best results. Before serving, dust the top with cocoa powder and garnish with additional banana slices if desired.
