Ingredients
- 22 oz bag of waffle fries
- 1/2 lb ground beef
- 1 packet of taco seasoning
- 1/2 yellow onion, diced
- 2 tbsp oil
- 3/4 cup shredded cheddar cheese
- 3/4 cup shredded Monterey Jack cheese
- 1 large tomato, seeds removed and diced
- 1 ripe avocado, diced
- 1/2 cup chopped scallions
- Sour cream, for topping (optional)
Instructions
- Preheat oven to 400°F (200°C). Spread the waffle fries in a single layer on a greased baking sheet. Bake until golden and crispy, about 20-25 minutes.
- While the fries bake, heat the oil in a medium pan over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
- Add the ground beef to the pan, breaking it up finely. Stir in the taco seasoning and cook until the beef is fully browned and cooked through, about 6-8 minutes. Remove from heat.
- Once the fries are done, remove them from the oven. Sprinkle the shredded cheddar and Monterey Jack cheeses evenly over the fries. Return to the oven for 3-5 minutes, or until the cheese is melted.
- Remove the fries from the oven and top with the cooked beef mixture. Garnish with diced tomatoes, avocado, and scallions. Add sour cream if desired.
