1 cup strong brewed coffee, cooled
2 tablespoons rum or coffee liqueur (optional)
1 package ladyfinger cookies
4 large bananas, sliced
1/2 cup sugar
4 large egg yolks
1/4 cup all-purpose flour
2 cups milk
1 teaspoon vanilla extract
8 oz (225g) mascarpone cheese
1 cup heavy whipping cream
Cocoa powder, for dusting
Directions
- Make the banana pudding: In a saucepan, whisk together the sugar, egg yolks, and flour. Gradually add the milk while whisking constantly. Cook over medium heat, stirring frequently, until the mixture thickens and comes to a gentle boil. Remove from heat and stir in the vanilla extract. Let the pudding cool completely.
- Prepare the coffee mixture: In a shallow dish, combine the cooled coffee with rum or coffee liqueur, if using. Set aside.
