This Strawberry Crunch Banana Pudding combines creamy banana pudding with fresh bananas and a crunchy strawberry-flavored topping, creating a fun twist on a classic dessert.

Ingredients

  • For the Banana Pudding:
  • 1/2 cup granulated sugar

  • 1/3 cup cornstarch

  • 1/8 teaspoon salt

  • 2 3/4 cups whole milk

  • 4 large egg yolks

  • 2 tablespoons unsalted butter

  • 1 teaspoon vanilla extract

  • For the Crunch Layer:
  • 1 1/2 cups crushed strawberry-flavored cereal (such as Strawberry Crunch or similar)

  • 1/4 cup granulated sugar

  • 1/4 cup unsalted butter, melted

  • For Assembly:
  • 4-5 ripe bananas, sliced

  • Whipped cream (store-bought or homemade)

Directions

  • Prepare the Banana Pudding:
  • In a medium saucepan, whisk together the granulated sugar, cornstarch, and salt.
  • Gradually whisk in the milk until smooth.
  • Cook the mixture over medium heat, whisking constantly, until it begins to thicken and come to a boil.
  • In a small bowl, whisk the egg yolks. Temper the egg yolks by gradually adding a few spoonfuls of the hot milk mixture to the yolks, whisking constantly.
  • Slowly pour the egg yolk mixture back into the saucepan with the remaining pudding mixture, whisking continuously.
  • Continue to cook for 2-3 minutes, or until the pudding is thickened.
  • Remove from heat and stir in the butter and vanilla extract.
  • Transfer the pudding to a bowl, cover with plastic wrap (pressing it directly onto the surface of the pudding to prevent a skin from forming), and let it cool to room temperature.
  • Prepare the Crunch Layer:
  • In a medium bowl, mix the crushed strawberry-flavored cereal with granulated sugar.
  • Stir in the melted butter until the mixture resembles coarse crumbs.
  • Set aside.
  • Assemble the Pudding:
  • In a trifle dish, large bowl, or individual serving glasses, spoon a layer of banana pudding into the bottom.
  • Add a layer of sliced bananas on top of the pudding.
