Ingredients:
1 3/4 cups (230g) all-purpose flour
1 teaspoon baking soda
1/2 teaspoon fine salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon ground ginger
1 1/2 cups (300g) sugar
1/2 cup (120ml) vegetable oil
2 large eggs
1 cup (240ml) canned pumpkin purée
1/3 cup (80ml) water
1 teaspoon vanilla extract
Directions:
Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.
In a large bowl, whisk together the sugar and oil until well combined. Add the eggs one at a time, beating well after each addition.
Add the pumpkin purée, water, and vanilla extract to the wet ingredients and mix until smooth.
Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
