Ravioli with Tomatoes, Asparagus, Garlic, and Herbs

 

Delicious ravioli paired with tender asparagus, cherry tomatoes, and a zesty garlic-herb sauce. Quick and flavorful, perfect for a satisfying weeknight meal!

Ingredients:

  • 1 tablespoon olive oil
  • 1 pound asparagus, trimmed and cut into 2-inch pieces
  • 2 cups cherry tomatoes, halved
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • 1/4 cup chicken broth
  • 1 tablespoon lemon juice
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 1 package (20 ounces) refrigerated cheese ravioli

Directions:

  1. Cook Ravioli: Prepare ravioli according to package directions. Drain and set aside.
  2. Sauté Vegetables: Heat olive oil in a large skillet over medium-high heat. Add asparagus and cook until tender-crisp, about 4-5 minutes.
  3. Add Tomatoes and Garlic: Stir in cherry tomatoes and garlic, seasoning with salt and pepper. Cook until tomatoes soften, about 2-3 minutes.
  4. Simmer Sauce: Pour in chicken broth and lemon juice. Simmer for 2 minutes.
  5. Combine: Add ravioli to the skillet, tossing gently with vegetables and sauce. Stir in basil, parsley, and Parmesan cheese. Heat through for 1-2 minutes.
  6. Serve: Top with additional Parmesan cheese if desired. Enjoy hot.
