Ingredients

  • 22 oz bag of waffle fries
  • 1/2 lb ground beef
  • 1 packet of taco seasoning
  • 1/2 yellow onion, diced
  • 2 tbsp oil
  • 3/4 cup shredded cheddar cheese
  • 3/4 cup shredded Monterey Jack cheese
  • 1 large tomato, seeds removed and diced
  • 1 ripe avocado, diced
  • 1/2 cup chopped scallions
  • Sour cream, for topping (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Spread the waffle fries in a single layer on a greased baking sheet. Bake until golden and crispy, about 20-25 minutes.
  2. While the fries bake, heat the oil in a medium pan over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  3. Add the ground beef to the pan, breaking it up finely. Stir in the taco seasoning and cook until the beef is fully browned and cooked through, about 6-8 minutes. Remove from heat.
  4. Once the fries are done, remove them from the oven. Sprinkle the shredded cheddar and Monterey Jack cheeses evenly over the fries. Return to the oven for 3-5 minutes, or until the cheese is melted.
  5. Remove the fries from the oven and top with the cooked beef mixture. Garnish with diced tomatoes, avocado, and scallions. Add sour cream if desired.
